Ingredients

Filling

1 1/2 C fresh strawberries, sliced into quarters

2 peaches or nectarines, cored and diced

1 Tbsp melted vegan butter

4 Tbsp agave

Batter

2 Tbsp melted vegan butter

1 cup old-fashioned rolled oats

2/3 cup almond milk or oat milk

1/2 cup regular or gluten-free all-purpose flour

1/2 tsp cinnamon

1 tsp baking powder

3 TB agave

Directions

1 Slice the strawberries and peaches. Grease a pie dish with baking spray.

Preheat oven to 350°. Melt 1 Tbsp of vegan butter in large skillet at medium heat, then add the berries, peaches, and agave. Cook, stirring frequently, for 5-7 minutes or until the berries have softened.

Transfer the berries and peaches to the greased pie dish. In a separate bowl, add 1 Tbsp melted vegan butter, oats, milk, cinnamon, baking powder, and agave. Mix well, then add the flour. Mix until a thick oatmeal cobbler batter is formed. Pour the cobbler batter over the berries and peaches.

Bake the cobbler for about 15 minutes or until the oats are cooked through. Broil for 1-2 minutes at the end to give the cobbler more color. Serve warm, topped with vegan vanilla ice cream.

Enjoy with a glass of Giesen 0% Sauvignon Blanc!
